Yes, famous Schnoorviertel can be crowded, but only on weekends during holidays. Try to go there weekdays or in the evening. It's fun to crab around in the little very, very narrow streets and you will sure find out why the main "street" is called "schnoor" (dialect german for thread). BTW it has some nice cafes and clubs there...

You can shop pretty good in Bremen. But it was very crowdy at the Schnoorviertel. The streets are very narrow. It wasn't really fun anymore than.
